Southwestern Quinoa Avocado Stuffed Pepper
Stuffed Peppers are often a dime a dozen…We set out to change that :). We combine protein-packed Quinoa, heart-healthy Avocados, nutritious vegetables such as Zucchini and Carrots, fibrous Black Beans, and finally some sharp cheddar to top off this wholesome stuffing (was that a run-on? Or just a lot of adjectives?). And just in case you didn’t think you had enough taste and nutrition we added some Garlic Roasted Green beans on the side! This meal is a Nutritional Powerhouse while being much lower in calories than normal stuffed peppers.
